Tonkotsu (pork bone broth) ramen is arguably the most popular style we Singaporeans adore. The shiokness of the “gao” (thick) broth is just so one-of-a-kind and tummy warming.
At Ramen Hitoyoshi, the broth is simmered over eight long hours, then chilled overnight to seal in every flavor profile, before being served the next day! For that amount of dedication to quality, it’s not hard to imagine how savory the broth was – and why i literally finished the soup towards the end!
For first timers, we would definitely recommend going for the Original and “All Toppings” options – simply because you get to try 3 different styles of pork! From Buta Shoga, Chashu, to Aburi Belly Chashu. The highlight definitely the latter. The every so sinful but so good and melt-in-your-mouth texture will make those calories worthwhile, trust me!
For sides, it has got to be the Prawn Mayonnaise. It’s simple, but sooooo good that it completes the meal. (after 3 plates of it, to yourself at least.) Tested and proven!
