Nothing short of stellar – STELLAR at 1-Altitude

Besides being up on Level 62, overlooking the wonderful skyline of Singapore, Stellar at 1-Altitude does really amazing food. In collaboration with Chef Christopher Millar from Stellar, Singapore & Chef Scott Pickett from Estelle, Melbourne, we were treated to a range of dishes. This is a partnership between Tajima, Four hands and wine pairing with Crystal Wines. 

Before we started our meal, bread was served, followed by Consequential Nibbles – Vegemite in housemade puff, Tuna Tartare and a savoury choux puff.

Steamed sea urchin custard with Iberico and Sturia Caviar, paired with 2016, Greywacke Sauvignon Blanc. It’s a delicious savoury and creamy custard topped with fresh uni, i love the crispy iberico stick, golden and crunchy!

Hand dived Japanese Scallop with seaweed and ginger lime, topped with a generous amount of Ikura, this was paired with their 2015 Flametree Chardonnay. Scallops were absolutely plump and goes really well with those lil orange pearls of Ikura.

Low temperature magrer duck breast with rillettes, black radish and quince, paired with a 2015, Katnook Estate Merlot.

Crispy skinned Amadai with tarama beurre noisette, zucchini and green peppercorn, paired with 2017, La Boheme, Act 2 Dry Pinot Rose. Amadai is a great choice of fish which chefs like to use in their dish, i enjoyed this one, crisp till you can eat everything down to the tail, this is boneless by the way!

Tajima wagyu oyster blade MBS 8-9 with burnt carrot and fermented black truffle, paired with 2013, Katnook Estate Cabernet Sauvignon. Can’t say no to wagyu, the black truffle intrigued me, very interestingly salty and slightly sour at the same time, great to go with fatty meat, as it helps cut through the taste between bites.

We ended the meal with a smooth Chocolate dessert with buckwheat and miso, paired with a 2013, Pirramimma Late Harvest Riesling. Decadent chocolate with surprises of cracklings around, makes for a great round up of our lunch!
